      Treat yourself to the great taste of Buffalo!
 
      Early explorers and newly arrived settlers were surprised and pleased when they discovered that meat from the buffalo was both succulent and much more agreeable to their digestive system than what they had experienced with beef and other meats. Bison meat tastes similar to fine beef, with just a slightly sweeter and richer flavor. Buffalo is naturally flavorful and tender and can be prepared much the same as beef. It is a dense meat that tends to satisfy you more, while eating less. In fact, this was often noted in the journals and records of the early explorers. What they likely didn’t know, and probably didn’t care about, was that buffalo meat is nearly fat free, has fewer calories, less cholesterol, and more iron than beef, chicken, pork or salmon!
     

      Our buffalo are handled as little as possible. They spend their lives on grass, much as they always have, with very little or no time in the feedlot. Our animals are never subjected to questionable drugs, chemicals or hormones. They are never fed low-level antibiotics or any animal parts. The National Bison Association is proud of the new USDA approved “Certified American Buffalo” seal that offers customers an extra degree of confidence in the quality of bison meat products.
     

       When it comes to cooking, this excerpt from the Buffalo Is Heart Healthy cookbook states, “Although buffalo meat is similar to beef, it needs to be handled and cooked differently. You will find most recipes for other red meats can be adapted to buffalo. The important things to remember are, DO NOT OVERCOOK!!, and do not let the meats dry out. Remember, ‘low and slow’. Overcooked or dried out buffalo meat will bring you the same results as other meats that are overcooked – something nearly as palatable as an old boot.!”

       When dinner is over, it is time to kick back and settle in for a round of some first class entertainm-ent. Depending on who is in camp that day, you will be entertained by either Native American dancers in full regalia or other live entertainment.     

       This area has been home to various Native Americans for thousands of years. Their ties to this land and the buffalo that thrived here can’t be overstated. Several buffalo kill sites in the area, dating back thousands of years, are evidence of the enormous effort required to take advantage of this resource that provided nearly every crucial part of their very existence. It is no wonder that many of the Plains Indian dances included elements of this experience, and that these movements, sounds and rhythms have both a genuine and sanctimonious feel about them. These individuals are direct decenents of the original Kiowa tribe who established themselves here along the Washita River around 1800. It is true living history to watch these individuals as they revel in their time-honored tradition.
       

       Captain Jack Parker was raised on this ranch and he is proud of it! He is a member of the American Battlefields Preservation Group, has performed at numerous Cowboy Poet gatherings, and is a lifetime member of the National Cowboy and Western Heritage Museum in Oklahoma City.
